Abstract
Chromatic discoloration of mascarpone cheese inoculated with strains o f Pseudomonas aeruginosa, Pseudomonas fluorescens, Pseudomonas aureofa ciens, Shewanella putrefaciens, Serratia marcescens, Enterobacter aggl omerans and Micrococcus luteus have been illustrated.
