Food processing has two main aims: to supply wholesome foods throughou
t the year which maintain health and provide an enjoyable diet, and to
generate income for producers. Processing staring with harvest and fi
nishes when the processed foods are eaten. The purpose is to extend th
e storage time (that is, to preserve the food) and/or to change the co
lour, flavour, or texture to make the food more attractive or easier t
o eat. Other important benefits include less food wastage and therefor
e a increase in the total food supply, and less danger of food poisoni
ng.
