Abstract
With the current knowledge of the microbiology of thick juice storage, it is not currently possible to assign statistically valid pass/fail limits to the current hygiene testing regime. However, tank cleaning i s still of value in helping to prolong the effective storage life of t hick juice, and data gathered using these tests may enable limits to b e set in the future.
