A. Versari et al., ADULTERATION OF FRUIT JUICES - DIHYDROCHALCONES AS QUALITY MARKERS FOR APPLE JUICE IDENTIFICATION, Lebensmittel-Wissenschaft + Technologie, 30(6), 1997, pp. 585-589
Some phenolic compounds, (+) catechin, (-) epicatechin, chlorogenic ac
id, phloretin glucoside (phloridzin) and phloretin xyloglucoside, in s
everal juice samples were separated and identified by reversed phase h
igh performance liquid chromatography/diode array detection (RP-HPLC/D
AD). Dihydrochalcones were identified as 'markers' in apple samples, t
heir content was calculated and a 'threshold concentration' for detect
able addition was evaluated. The direct injection method gives excelle
nt recovery, accuracy and precision with a detection limit of 1.6 mg/L
