Abstract
The monolayer technique was employed to monitor the microbial lipase b iocatalysed hydrolysis of triglycerides with different acyl chain leng ths. The kinetic data were correlated with those obtained employing th e substrate in an emulsion. The influence of the monofilm surface pres sure on the hydrolysis rate and activation energy was evaluated.
