In 1993, the HACCP system was first mentioned in the European food leg
islation in Council Directive 93/43/EEC. Article 3 of the official Ger
man version of this directive contains imprecise and partly faulty tra
nslations. They maybe the reason for contradictory or even wrong inter
pretations of the HACCP system in numerous German publications. Hence,
in this paper the HACCP system is being described as it was defined b
y Coder Alimentarius in Alinorm 97/13A.
