The advance to acquiring a common quality standard for hygiene during
pig-slaughtering in Westfalen-Lippe is described. Based on the laborat
ory results the formation of the standard and the realisation in pract
ice is represented. The results of the regular weekly check in five sl
aughterhouses during a period of eight years are introduced and the co
nclusions are discussed.
