The concentration profile of aroma components in a homoginate of fresh
strawberries were investigated with liquid-liquid extraction and soli
d phase micro extraction (SPME). The aim of investigation was to test
the SPME-technique for aroma analysis in the process of plant breeding
. Some key compounds of strawberry aroma, especially semi-volatile com
pounds are quantificated from the head space with a reproducibility us
eable for screening methods.
