Mm. Gerdemann, CAMPYLOBACTER-JEJUNI STRAINS - THE IMPORTANCE OF FOOD HYGIENE FOR THEPRODUCTION OF POULTRY, Die Fleischwirtschaft, 76(1), 1996, pp. 58-60
From the point of view of food hygiene poultry plays an important role
in the transmission of campylobacter jejuni onto humans. To minimize
this problem optimal keeping conditions are a prerequisite in order to
avoid animals infecting each other. Furthermore, the danger of contam
ination and spreading during slaughtering has to be borne in mind. Her
e, too, a series of measures can be taken with regard to campylobacter
disease control. Last but not least, it is up to the consumer to care
fully handle raw poultry lest he be infected. In addition, it would be
desirable to develop a test serum comparable to a salmonella test ser
um - containing all known strains of campylobacter jejuni in order to
quickly identify campylobacter jejuni infections.
