Abstract
A simple and reliable method for the preparation of fruit juices and f ruit juice concentrates for the determination of fruit acids by HPLC i s presented. Recovery rates confirm the reliability of this preparativ e technique. A following overview compares the results of the determin ation of fruit acids in orange, lemon, grapefruit and apple juices by HPLC to literature values.
