An amperometric fructose-sensor was produced by immobilization of fruc
tosedehydrogenase on the working electrode of thick-film platinum elec
trodes. Potassium ferricyanide served as mediator for electron transfe
r. The sensor was tested as a detector in flow injection analysis (FIA
), flow diffusion analysis (FDA) and HPLC. For the analysis of juices,
the coupling of the enzyme electrode with HPLC showed the best agreem
ent with the results of common enzymatic fructose determination and tu
rned out to be a suitable method for laboratory analysis. However it i
s beaten by FIA concerning the achievable frequency of analyses.
