The oxidative rancidity of olive oil, sunflower oil and sunflower oil
high in oleic acid in the presence of a-tocopherol has been studied. T
he influence of temperature, antioxidant concentration and unsaturatio
n degree on tile peroxidation of these oils have been analysed, and th
e kinetics study of rancidity process has been realized, deducing a ki
netics equation that reproduce the experimental data with an error low
er than 5%.
