This paper critiques the appropriateness of current methods of nutriti
on education delivery in light of the increasing number of multicultur
al participants in nutrition education programs. Values regarding time
, authority and trust, competition and independence, science and relig
ion, and language impact education and generally differ between Caucas
ians and people from other cultures. This critique discusses these dif
ferences in terms of how they impact nutrition education effectiveness
. Recommendations to decrease educational ethnocentrism are made.
