Potential sources of Salmonella spp. and contamination pathways in the
pork production line are being investigated in a pilot study schedule
d for two years. Included are establishments of various structures fro
m the different steps of the production line; they provide samples for
analysis at intervals. During the period from calendar week 3 to week
40 in 1996 a total of 5093 samples (pig faeces, intestinal lymph node
s, meat, stools from employees, etc.) were tested for Salmonella. The
first results of the study are reported.
