Singlet oxygen produced by photochemical sensitizers may play an impor
tant role in the oxidation of lipids in foods. Therefore, we studied t
he singlet oxygen oxidation of lipids and the scavenging ability of an
tioxidants. Singlet oxygen was generated using the photosensitizer ros
e bengal. The oxidation products of lipids and antioxidants were separ
ated by high-performance liquid chromatography and monitored using pos
t-column chemiluminescence and/or iodometric detection. The competitiv
e reaction rates of various antioxidants and lipids were studied to el
ucidate the roles played by antioxidants in the prevention of food oxi
dation by singlet oxygen.
