Abstract
290 carcass samples have been taken and the total aerobic mesophilic c ount and the number of coliforms were evaluated using the plate count method, the drop plate method and the Petrifilm (TM) method. The resul ts of the different methods have been compared. Regarding the evaluati on of the total aerobic mesophilic count correlations from 0,85 up to 0,95 were found. The highest correlation (r = 0,95) could be determine d comparing the results of the plate count method and the Petrifilm (T M) method. Due to very low contamination of the samples with coliforms the results often remained under the fixed limits. Therefore a compar ison of coliform-results was not possible.
