In countries with high agricultural production costs, market shares ca
n only be maintained in the future if meat quality is commensurate wit
h higher prices. Multifarious efforts are being made to ensure that th
is is the case. More attention should be paid to postmortal maturation
processes. This paper reviews the fundamentals of muscle physiology a
nd its significance for meat quality. In particular, the effects of te
mperature on these processes are described.
