Abstract
Dialysis of 1,5-glucono-delta-lactone-induced myofibrillar protein and myosin gels unexpectedly gave rise to stronger gels rather than a rev ersion to the original ungelled state. Dialysis of myosin also resulte d in the formation of gels.
