Abstract
The concept of the predictive microbiology offers a powerful tool as a quantitative approach for estimation and extension of the microbiolog ical stability and safety of meat products. To provide a reliable unde rstanding of the advantages, limitations, and so the potential applica tions, this review considers the basic concept and the current status of predictive microbiology. References to practical applications, part icularly for the meat industry, complete the paper.
