The Rasch model has been employed as a tool for physico-chemical chara
cterization of honey samples from different floral origins. The result
s obtained showed that physico-chemical composition is very similar fo
r the different groups, mela honeys being the most homogeneus one. Mor
eover, these honeys showed lower values for glucose, fructose and ligt
hness, and higher ones for Mg than the other groups; this is based on
the misfitting analysis of the data.
