In the second part of this paper, ciclycal heat treatments are describ
ed, particularly intermittent warming or cooling and fluctuating tempe
rature during cold storage of fruits and vegetables. These heat treatm
ents have been demonstrated to eliminate or alleviate postharvest loss
es of quality, generally associated with chilling injuries, pathogen i
nfections and senescence. The biochemical and physiological basis of t
hese ciclycal heat treatments and their effects on postharvest fruit q
uality are discussed in this review, paying special attention to the S
panish contributions on this topic.
