The mineral and sugar fractions of 25 peach liqueurs have been determi
ned in order to characterise these beverages in relation to their base
fruit: peach. Fruit components were found in only nine of the liqueur
s analysed. Sucrose was the major sugar, together with the polyalcohol
sorbitol. Potassium, calcium and magnesium were the major macroelemen
ts. In the other liqueurs analysed, beta-fructose and alpha- and beta-
glucose were the major sugars, sorbitol was not detected, and potassiu
m, calcium and magnesium were in small proportion. These beverages hav
e probably been made by aromatising techniques, without direct additio
n of the fruit.
