Olive oil regulations are very complex within the EEC. Year after year
a lot of rules and analytical methods were introduced to guarantee pr
oduct authenticity against frauds. In this year as well, the regulatio
n (EEC) No. 2568/91 on the characteristics of olive oil and olive-resi
due oil and on the relevant methods of analysis has been modified. Com
ments are reported on this regulation. Besides this other national and
international regulations on olive oil are taken into account.
