Abstract
Lipolytic activity of selected Micrococcaceae strains, isolated from I talian dry sausages, was evalued in vitro. Strains were Staphylococcus and Micrococcus spp. Lipolytic activity was studyed in broth with por k lard by evaluation of mono- and di-glycerides, free fatty acids. Act ivity depends on considered strain.
