In meat production dissection is the one production phase that so far
had to do without full mechanization of the work processes. This fact
is surprising because the meat industry, given its high quality of dis
section methods, has been highly effective economically through value
added and quality assortment as regards the extraction of parts of mea
t. The IFFA 1995 offered the opportunity to get a general idea of the
current stage of development concerning equipment and facilities for d
issection and deboning. As could be seen, a few interesting attempts a
t full mechanization for dissection in large plants have been made. In
particular, individual pieces of equipment to work on various parts o
f meat have existed for a couple of years. However, an equipment for m
edium-sized or small enterprises is hardly available. Moreover, the fa
cilities offered by various suppliers are neither compatible nor techn
ically in tune with each other.
