Abstract
The future tasks of the meat industry include increased bacteriologica l controls, suppliers that can be trusted, logistical quality manageme nt as the basis of certification (DIN-ISO 9000 and EN 29000), guarante eing the commercial value of carcases and adjustment to EC guidelines. All this demands a great deal of further development of grading metho ds for pigs and cattle using technical equipment and here high capacit y slaughtering plant also has to be taken into account. This also requ ires that part-products and data should be correctly classified and th at there should be checks on and control of material flow in slauahter houses even when using barcoding or targeted, computer-managed storage .
