Purchasing (DIN-ISO point 4.2) is an important point for the implement
ation of a quality system. The procedure must ensure that the purchase
d product conforms to specified requirements. The fullfilling of this
condition means the realisation of the HACCP-concept at the CCP ''Purc
hasing'', developed by the ICMSF (International Commission on Microbio
logical Specifications for Foods) for the process analysis in the micr
obiological field. In order to ensure a uniform procedure for the rece
iving inspection in meat processing plants in Styria, a quality system
procedure has been developed. This procedure describes organisational
activities and responsibilities, e.g. adequate storage of microbiolog
ical test equipment, schedule of the 'veterinaries for the routine exa
minations or the documentation of the results. Moreover the quality sy
stem procedure contains a checklist for the receiving inspection and a
document for the control of nonconforming products.
