Abstract
A new beer fermentation model is developed based upon fundamental know ledge of biochemical pathways. The model can be subdivided into a grow th model, an amino acid model, and a flavour/aroma model. Experimentat ion allowed for accurate model parameter identification. The results d emonstrate the capability to accurately describe batch beer fermentati on dynamics.
