A method for quantitative determination of phloretin glucoside in appl
e juice and nectar of pears using HPLC with coulometric electrode arra
y detection is described. After a simple sample preparation the compon
ents are separated on a reserved phase column (C18, 5mum) and detected
at potentials between + 400 and + 855 mV. The concentration of phlore
tin glucoside in commercial apple juices varies between 10.4 and 16.7
mg/L. The chromatograms of apple and pear samples are very simple, but
have a different pattern. Therefore it is possible to recognize an ad
ulteration of pear nectar with apple juice down to 1%.
