Water activities of sunflower seed (whole), hull and endosperm were me
asured at 25, 40 and 50-degrees-C and different moisture contents by m
eans of an electronic a(w)-meter in the range 0.199-0.867. Based on th
e equilibrium between the water in air and a constant moisture specime
n, the method permits a direct measurement of the isosteres and was us
ed to estimate the variation of the isosteric heat with moisture conte
nt. In the range of temperature investigated it was found that the iso
steric heat is pracitically independent of temperature. The hygroscopi
c equilibrium data of the different materials were modelled by a BET-t
ype two parameter isotherm for the whole range of water activity inves
tigated.
