S. Bishnoi et N. Khetarpaul, VARIABILITY IN PHYSICOCHEMICAL PROPERTIES AND NUTRIENT COMPOSITION OFDIFFERENT PEA CULTIVARS, Food chemistry, 47(4), 1993, pp. 371-373
Two each of the vegetable and field pea varieties were investigated fo
r physico-chemical properties and proximate composition. Density range
d from 1.27 to 1.30 g/ml in different pea cultivars. The vegetable pea
variety Arkel had higher hydration capacity, hydration index, swellin
g capacity and swelling index than the field pea cultivars. Varietal d
ifferences in field peas had no influence on the physicochemical prope
rties. Field pea varieties contained higher amounts of total carbohydr
ates and lower amounts of ash, fat and crude fibre than vegetable peas
. Bonneville, Arkel and Rachna varieties had similar crude protein val
ues.
