The Contents of copper, iron, zinc, manganese, calcium, magnesium, sod
ium and potassium were determined by atomic absorption spectrophotomet
ry in 300 samples of pasteurized milk from 10 milk factories belonging
to 6 provinces of the Andalusian Community. The mean content was 0.14
mg/kg for copper, 0.40 mg/kg for iron, 3.82 mg/kg for zinc, 0.022 mg/
kg for manganese, 1.28 g/kg for calcium, 0.11 g/kg for magnesium, 0.56
g/kg for sodium and 1.78 g/kg for potassium. The variance analysis sh
owed the existence of statistically significant differences (p < 0.001
) in the content of all the element among factories. Scheffe homogenei
ty test (p < 0.05) was used but the groups formed did not show any sta
ndard distribution. The correlation matrix between the elements was us
ed as a starting matrix for the factorial analysis of the relation bet
ween the mineral elements in the pasteurized milk, and showed a high r
elation between calcium, magnesium and zinc.
