In this short review the more recent analytical methods described in the li
terature, for anti-nutritional factors (ANFs) in legume seeds are discussed
. Traditional methods are also sometimes included, particularly, when they
are still widely used. Brief descriptions and the main properties of these
non-nutrient components are given. The ANFs reviewed are lectins, trypsin i
nhibitors, tannins, antigenic proteins, alkaloids, phytic acid and alpha-ga
lactosides.
