A method is described for reduction of the glucosinolate and sinapine conte
nt of rapeseed. The method involves a hydrothermal long-term treatment at a
lkaline pH with a subsequent high temperature - short time (HTST) expander
treatment. Following the treatment sinapine is reduced to a hardly detectab
le levels and glucosinolates are reduced to 10 % of their original value.
