Abstract
Since the introduction of expander equipment in the food industry, there is more freedom in the design and conditions under which the processes are ca rried out as a result of ongoing research. Research on the effect of expand er cookers, as modem food processing equipment, has only just started. The process of expander-cooking offers soy processing plants not only an ec onomic advantage but a great deal of profit from the flexibility of the exp ander process. It is expected that more applications will be described in t he near future for soy, as well as for other grains, as a flexible device i n the field of product development.
