Abstract
Modified Atmosphere Packaging and related technologies are increasingl y used to extend shelf-life of fresh produce. This paper reviews the e ffect of such technology on the spoilage microbiological flora and foo d-borne pathogens which may be present in produce and also on the orga noleptic properties of the product.
