F. Untermann et M. Hartig, THE HACCP-SYSTEM - PART IV - INTEGRATION OF THE HACCP-SYSTEM OF CODEXALIMENTARIUS INTO INTERNAL COMPANY CONTROL ACCORDING TO 4 LMHV, Deutsche Lebensmittel-Rundschau, 93(12), 1997, pp. 375-378
The basic agreement between 4 of the Food Hygiene Directive (LMHV) and
the HACCP system of Coder Alimentarius is first of all based on the f
act that a specific hazard analysis constitutes the point of departure
for preventive measures, Hence, 4 LMHV and Codex Alimentarius share t
he feature of an in-process control which is based on a specific hazar
d analysis. However, in contrast to the more detailed HACCP principles
the requirements in 4 LMHV which regulate the ''establishment and per
formance of effective safety measures and their monitoring for those c
ritical points'' can be applied to all sectors of the food production.
The undefined legal nation ''effective safety measures'' implies the
possibility to call e. g. for a documentation or for the application o
f the entire HACCP system in case this constitutes the only way to ens
ure sufficiently effective safety measures for certain production proc
esses.
