This work deals with the identification and quantitative evaluation of
sulfates, nitrates, chloride, acetic, lactic and formic acids. Determ
ination was carried out using a Dionex ion chromatograph with a conduc
tivity detector. Different white and raw sugar samples have been analy
sed with the aim of evaluating their quality. Organic acids production
seems related to storage conditions rather than processing. Inorganic
anions may be used to determine the crystallization quality. (C) 1998
