Abstract
Phosphorus-31 nuclear magnetic resonance provides well-dispersed, quan tifiable phospholipid profiles of commercial and laboratory anionic le cithin preparations. Seventeen phospholipids were determined in commer cial soybean lecithins. Lecithin refinement to produce anionic-enriche d lecithins may be monitored precisely.
