For three lots of commercially produced pasteurized spray-dried egg pr
oducts that had been proved Salmonella-positive in a previous routine
examination the Salmonella-distribution was determined using an MPN-te
chnique (30 samples per lot). The Salmonella-count of most of the indi
vidual samples did not exceed the detection limit of 0.03/g. In the sa
mple units proved to be positive for salmonellae, the contamination le
vel reached only low values with extremes of 0.93/g. Results indicate
that for pulverized foods it is not necessary to assume that salmonell
ae are concentrated in spots.
