In 1995/6 comprehensive microbiological investigations of dessiccated
coconut (dc) had been done with the aim to set a hygiene-status for th
e processing mills. We located in mixed samples the aerobic bacterial
count, yeasts, moulds, enterobacter, coagulase positive staphylococcus
and salmonella. Using a unic estimation key we carried out the hygeni
c judgement of dessiccated coconut. By reason of this judgment the est
imation numbers were asigned to the mills. In future only those mills
should be regarded, which reach the estimation number of 12.
