The antioxidative effects of three prolamins, alpha/beta-gliadin, C ho
rdein and alpha-zein, were investigated in powders in which the prolam
in under test encapsulated peroxide-free ethyl esters of the unsaturat
ed fatty acids, linoleic, alpha(gamma)-linolenic, arachidonic, eicosap
entaenoic and docosahexaenoic acids, All prolamins inhibited the autox
idation of ethyl esters of linoleic, linolenic and arachidonic acids,
i.e. with two to four unsaturated beads. C hordein protected an eicosa
pentaenoic acid ethyl ester from autoxidation in the powder system for
7 days, whereas other prolamins were less effective. None of the prol
amins completely inhibited the autoxidation of docosahexaenoic acid et
