The descriptive profiles of three bulk and intense sweetener blends (m
altitol-cyclamate, maltitol-acesulfam-K, and sucrose-cyclamate) were e
stablished with reference to a 10% sucrose solution, These blends were
chosen because they had been demonstrated in a previous study (Huttea
u et al., 1998) as having a significant level of synergy. The descript
ive profiles were established by a quantitative descriptive analysis-(
QDA) type technique and the results were analysed by analysis of varia
nce and by principal component analysis to examine the overall relatio
nships among single solutions and mixtures of sweeteners. A significan
t reduction of the non-sweet tastes and aftertastes usually associated
with acesulfam-K and cyclamate was observed. (C) 1998 Elsevier Scienc
