The hydration of the globular proteins comparatively with that of unfo
lded ones was determined by the absorption millimeter spectroscopy. Th
e ability to provide retardation of rotational mobility of water molec
ules in the hydration shells for the various kinds of molecules (group
s) increases in the following order: water structure breaking compound
s < polar groups < unfolded proteins < non-polar groups approximate to
globular proteins.
