Although the composition and physico-chemical properties of bovine mil
k have received considerable attention over the last few decades, rela
tively little is known about porcine milk. The composition of porcine
milk differs from that of bovine milk in a number of important respect
s. However, certain problems, such as the absence of a standard nomenc
lature system for porcine milk proteins, has led to some uncertainty i
n identifying the various porcine proteins correctly. This review deal
s with the principal porcine milk proteins and highlights the main dif
ferences between porcine and bovine milk proteins. (C) 1997 Elsevier S
