Abstract
The isodipeptide epsilon-(gamma-glutamyl)lysine is the product of the prote in cosslinking reaction of transglutaminase enzymes. The isodipeptide can b e detected in plant proteins after sequential digestion with proteolytic en zymes, purification using anion exchange chromatography followed by analysi s using an amino acid analyser or reversed phase HPLC.
