Abstract
Glass transition of wheat gluten was studied on its native form in relation with shaping processes based on thermoplastic properties such as extrusion or hot pressing, but also in wheat gluten film for a better understanding and control of its functionnal properties that are highly dependant of film water content and thus of ambiant relative humidity.
