Spinning process was used to produce biodegradable films from a dope(pH 12.
5) made of isolated soy proteins. The aim of the study was to investigate i
f the process induced particular protein structure and macromolecular netwo
rk orientation in films. CD spectra of diluted isolate at pH 7 and 12 indic
ated that the proteins in the dope were mainly unfolded. FTIR spectra of pr
ecipitated isolate and films were similar indicating similar secondary prot
ein structure. Stretching films perpendicularly or parallel to the directio
n of their formation did not induce significant differences (p<5%) on mecha
nical parameters. It can be conclude that spinning process induced neither
protein secondary structure modification nor network orientation in films.
