Insoluble fibre contents (IF) of 14 samples of green beans (Phaseolus
vulgaris L.) cultivated in Galicia (N. W. Spain) were determined gravi
metrically by a neutral detergent method. The soluble fibre contents (
SF), composed essentially of pectins, were determined by the carbazole
colorimetric method and by a HPLC method. The mean content of insolub
le fibre obtained (19.9% of dry weight) was very close to the mean con
tent of soluble fibre determined by colorimetry (19.6%), whereas it wa
s higher than the mean value of soluble fibre determined by HPLC (15.6
%).
