Thermospray-LCMS-analyses of polyphenols in malt, beer and hop are des
cribed. After extraction and polyamide-clean-up it is possible to dete
ct monomeric catechins and proanthocyanidins in different fractions as
[M+H](+)-ions by buffer ionisation. Using the discharge electrode phe
nolic acids are identified in malt and beer as [M-H](-)-ions. Besides
quinic acid esters and flavonol O-glycosides, showing significant frag
mentation in the tsp-spectrums like the proanthocyanidins, are additio
nally detected in hop. Further more the HPLC method was used to estima
te the quantitative value of proanthocyanidins in malt.
